Forbidden Noodles: From Cardboard to Brick & Mortar

Before launching Forbidden Noodles in La Grange Park, Illinois, owners Peter White and Ning Jin decided to give the concept a test run. The pair wanted to be sure they were on the right track before spending money on a storefront, so they rented a commercial kitchen space and began catering in the local area.

The food was well-received and, before long, the pair decided to launch a brick and mortar Forbidden Noodles, which is scheduled to be open in the spring of 2018.

Jin knew she always wanted to open a restaurant. As a young child, she would set up a little cardboard kitchen near her apartment and pretend to serve food to her friends.

"When I came to America, I really wanted to open something that was authentic and yet different," Jin said. "Finding the balance between the two ended up being a bigger challenge than I thought, but it's been a really great journey."

The restaurant will honor a unique, fast-casual concept. It will provide a clean, comfortable place to come in and eat or carry out, all without the process of having a waiter, leaving a tip, and everything else that goes with eating out.

"In short, we want you to get right to the good stuff: the food," said White. "Being able to eat good food in a nice atmosphere without the frills of fine dining is our number one goal."

Whether you are dining out with family, spending time catching up with friends, or just grabbing food to go, everyone is welcome and made to feel relaxed. The food is the focus.

Sticking to its roots, catering is still available through the company. Vegetarian and gluten-free menu options are available upon request. Disposable plates, napkins, chopsticks, forks, knives, spoons, and appropriate holding containers are all included with the catering order. Staffing can be provided upon request, as well.
